doc: Rework RHEL support statement

The doc currently says we support RHEL 7.5+, including all RHEL8/9
releases. This is unrealistic, latest RHEL7 is 7.9, I don't think we'd
be spending any time fixing an issue on RHEL 7.5 if RHEL 7.9 works, and
RHEL8 is similar, RHEL8.6 has been released, I don't see us spending
time on RHEL8.1-only bugs.

This commit changes the support statement to latest two RHEL7/8/9 minor
releases. (I'd be fine with just 'latest RHEL7/8/9 minor release as well).
