roachtest/large-schema-benchmark: enable locked leasing mode

Currently we only have simple testing for the locked leasing logic via unit tests and a special logic test config. We should enable this logic in one of our more complex tests for sanity testing for it inside the large-schema-benchmark workload. This will allow us to confirm correctness and no performance regressions.
