This PR is two-folds

  • adds a basic config for lvim, a.k.a. lunarvim
  • centralizes the EDITOR environment variables in the shell configs by removing hardcoded values in all the other configs, thus defaulting to EDITOR and VISUAL
    this has been mainly done to switch from helix to lvim with as few changes as possible
