Adds the Greenhouse Harvest v3 documentation URLs to source-greenhouse's externalDocumentationUrls so future API deprecation monitoring checks the current API docs.

Context: Greenhouse's legacy Harvest docs now carry the banner "The Harvest v1/v2 API is deprecated and will be removed on August 31, 2026. Please migrate to Harvest v3." The v3 docs live on a new host (harvestdocs.greenhouse.io) not referenced in the connector metadata.

• Added Greenhouse Harvest v3 API (https://harvestdocs.greenhouse.io/, api_reference)
• Added Greenhouse Harvest v3 authentication (https://harvestdocs.greenhouse.io/docs/authentication, authentication_guide)
• Existing legacy v1/v2 URLs kept (still valid, return 200, and remain relevant until 2026-08-31)

Superseded by #83811 (Greenhouse v3 Phase 1, airbytehq/airbyte-internal-issues#16900), which repoints the whole externalDocumentationUrls block in source-greenhouse/metadata.yaml to harvestdocs.greenhouse.io rather than adding v3 entries alongside the v1 ones. Recommend closing this PR to avoid a conflicting edit to the same block.
