The metadata dates were already pinned before generation, which keeps the info snapshot stable, and that is retained. The generated bytes now also go through PdfNormalizer, so the trailer /ID and any XMP packet are covered should a future QuestPDF or Skia version start emitting them. The pinned dates in the pdf snapshots are zeroed as a result.
