As discussed after today's sprint meeting: this pull request removes the problematic GitHub action to regenerate auto-generated docs, and instead incorporates a manual step into the release process. It also breaks the release process into more steps for greater clarity, as the existing step was overloaded with a lot of different actions.

Overall I think this is more clear and I'm glad experience since the previous sprint helped to improve the process!
