Channels don't support that as far as I am aware, you can force them to show by copying xml attributes from a library view but it doesn't make it work.
It depends of the plex client used. We feed plex with all the audio and
subtitle data, problems is client might or might not expect that in plex
channels. Since plex channels officially do not support subtitles and or
multiple audio tracks.

On Windows
Tried changing them during episode playback, Plex drop-down shows they changed but nothing actually changed.
On Android
Tried changing them before episode playback and during episode playback, the episode would reload but they didn't change.
