Add support for Mac ARM builds
We'd like to natively support macs with ARM builds
Proposal:
Add a new build to the build matrix
Alternatives:
Currently the x86-64 build actually works! But there is a performance penalty
Additional context
Make sure the installer and installer docs get updated
