cargo-{audit,c,clone}: migrate to new apple-sdk pattern

While we're here, also migrate to pkgs/by-name and run nixfmt-rfc-style.

• Tested basic functionality of all binary files (usually in ./result/bin/)
• 25.05 Release Notes (or backporting 24.11 and 25.05 Release notes)

Can you check if the OpenSSL dependencies here can be conditioned on !stdenv.hostPlatform.isDarwin? Often the Security dependency is for native TLS that doesn’t depend on OpenSSL.

Good point, it's optional for cargo-audit and cargo-c (though not cargo-clone).
