Motivation

Nixpkgs recently added support for running the daemon as unprivileged (See NixOS/nixpkgs#491809).

Instead of duplicating the test setup, use the upstream module.

Context

This PR switches from nixpkgs nixos-25.11 to release-25.11. This is due to the update delay. In a few days, it may be possible to change this PR to remove any differences in the flake.nix

Let's wait for 25.05-small at least, but then this looks great!

Nixpkgs recently added support for running the daemon as unprivileged.

It's in nixos-25.11 now, so I don't need any flake.nix changes
