[FEATURE REQUEST]: Hot reload coins file on launch

Currently, when there have been updates to the coins file, but the name of the coins file has not changed, user cant see new coins unless an assets reset is done via settings (which until #1632 is merged, will require re-enabling currently enabled coins)

Describe the solution you'd like
Ideally the coins file will be updated with new coins on launch, and retain previously active coins.

Additional context
This issue does not appear to have any negative impact on releases (as the coins filename changes) but does apply to any CI builds created between releases. So it's not critical, but would be convenient for QA purposes.
