feat: add config for testnet-hotel

Motivation

Add new configs for the testnet-hotel network.

Acceptance Criteria

• Add new testnet_hotel.yml config based on testnet.yml — the only differences are the NETWORK_NAME and BOOTSTRAP_DNS.
• Add new --testnet-hotel CLI option.
• Remove unnecessary config files (nano_testnet.py and unittests.py).

Checklist

• If you are requesting a merge into master, confirm this code is production-ready and can be included in future releases as soon as it gets merged
