Removed hacky usage of variant from UFL. Instead, FFCx should pick a sensible variant for elements. If the user wants to pick their own variant, a Basix element should be wrapped directly to avoid passing all the variant info via UFL. I've written a demo showing how to create elements directly from Basix (FEniCS/dolfinx#2140). This should be merged after that demo is available.
Added default variants for elements that need variants to be passed in following FEniCS/basix#436
