[datadog-operator] Update operator version to 1.11.1

What this PR does / why we need it:

• Update operator to latest release 1.11.1 (ignore the branch name since original Helm release meant to use 1.11.0)

Special notes for your reviewer:

• There is no additional/removal of RBACs in this release, it is solely a re-organisation regrouping resources that share the same verbs instead of separating them as can be seen (click on files changed tab and it should direct you towards the diff of the role that is collapsed by default) in https://github.com/DataDog/datadog-operator/compare/v1.10.0...v1.11.0?expand=1#diff-6d4c4e29ec096149781536bb9118fde8242c1901df764e3eda3019ac8503d6c7
