What does this PR do?
Pin omnibus-ruby branch for 6.11.x releases.
Motivation
DataDog/omnibus-ruby#82 will introduce a breaking change on
datadog-5.5.0for some software defs. So let's use a branch6.11.xthat's based ondatadog-5.5.0before that PR is merged
