[Refactor] UI - Improve Wording for Config Models in Model Table
Relevant issues
Models defined in the config will not have a created by or created at field, leading to the UI rendering "Unknown" and "Unknown Date" respectively. This PR changes the wording to explicitly tell the user the model is defined in the config, as opposed to "Unknown"
