fix: Univariate evals not set in ECCVM prover

We had intermittent failures due to these lines being dropped here https://github.com/AztecProtocol/aztec-packages/pull/3332/files#diff-1099ba7caf338825359bedc113356ebec68afbcdd38e9b89e3d32c1b88c12ef1L330. We also need to figure out why all tests pass without these.

All benchmarks are run on txs on the Benchmarking contract on the repository. Each tx consists of a batch call to create_note and increment_balance, which guarantees that each tx has a private call, a nested private call, a public call, and a nested public call, as well as an emitted private note, an unencrypted log, and public storage read and write.
