Add holesky support

Holesky is supported in viem, and it is exported from wagmi/chains. However, it is not listed in the docs page

Holesky is not a deprecated chain, and it is the chain recommended for testing Stake in Ethereum.

If it is just a matter of updating the docs, I can send a brief PR (I understand I just need to update docs/pages/core/chains.en-US.mdx and docs/pages/react/chains.en-US.mdx and the tests files).

It doesn't seem to be about updating the docs. I am unable to make holesky work with Metamask. I created a simple stackblitz where while I can connect to holesky, the Tx modal dialog from Metamask never shows up (I found the original issue on a project I work for, this stackblitz is to have a reproducible example)

After clicking Try send ETH the request to send Eth hangs. The status of useSendTransaction is loading and nothing happens.

It does work for mainnet.

EDIT: After 3 hours of troubleshooting, it seems the issue was on the RPC Metamask had configured. That was causing it to stuck, but I switched it to another one and now it works.

So we may be again on just updating the docs

This can be closed as in the latest version, all chains are directly exported from Viem, and Holesky is supported and docs are updated
