📝 Grapefruit Brett saison.

- 4.5 kg pilsner malt
- 500 g aromatic
- 500 g rye
- 50 g Fuggles
- Escarpment Laboratories Ontario Farmhouse Ale Blend (5 gallons pack)
- 2 L of freshly pressed grapefruit juice
- Mash 18.5 L at 73 °C for 1 hour (it should stay at 67 °C)
- Drain into mash tun
- Add 15 L at 76 °C for 15 minutes into the mash
- Drain into mash tun
- Boil for 1 hour
- At 0 minutes, add 15 g Fuggles hops
- At 45 minutes, add 15 g Fuggles hops
- Cool down to 20 °C
- Syphon into carboy
- Add yeast and gently mix
- After active fermentation, add the grapefruit juice
- Brewing: 2019-02-09
- Dry grapefruit: 2019-02-14
- Bottling: 2019-03-23
- Tasting: 2019-04-04
Smells like a Belgian beer, notes of grapefruit on the palate but not overwhelming. Some sourness. Lots of cereals in the mouth, good bitterness.
Feels like between 5.5 and 6.5 percent.
