is it possible to save only specfic fields of payload?

sometimes people:

• spam the webhook endpoint ( yes with signtuare ).
• or it's not a spam, they just send me payload of payment or something, and it's toooo long.

so after a while querying this dataset it too time consuming.. and ram too.
i need only some fields of it
so is it possible to only save few fields of it?
