Run automatic tests on Windows

Several discussions relate some bugs on Windows (e.g. #606 #666) it could be appropriate to execute tests on Windows too during the pipeline.

I understand it can be hard to test for people without access to a Windows machine, but I'm convinced it could be a great DX improvement.

If not, we should consider adding a warning on the documentation
