Question: should we switch to latest to avoid bumping in the future? I'm fine with latest.

latest is fine with me, it means we can just easily kick off a rebuild in the future without another PR being required.

My only question would be why did we pin it in the first place?

@peterdeme lets make the move to latest. We can always go back to pinning if we need to, and it saves you periodically bumping this.
