docs: add each representative color to logo

Each color represents a different section of this project, as this
repository was previously split up between multiple repositories with
different colors.

- Red was coturnix, NixOS configurations for personal machines
- Green was dotfiles, Home Manager configurations for all machines
- Blue was phenix itself, the NixOS configurations for servers
