Add examples directory

In a new examples/ directory should be two very simple examples that use @scio-labs/use-inkathon as a workspace import. This should make package development much quicker & easier.

• React example (via Vite)
• Simple script example (like https://github.com/scio-labs/polkadotjs-simple-scripts)

The examples should, by far, not showcase all the functionality but just being quite simplistic (connect wallet, read balance, maybe something else).
