i18n: redirects from any other language to default language are broken on vercel

Upstream issue at zankhq/astro-starter#23

It appears that, in production on Vercel, the redirect from /en/ to / is broken (due to english being the default locale set in this case, it may be happening for any locale that's set as default). Astro and Vercel make this quite the pain to fix (especially since our URLs are being utilized with trailing slashes).

it appears using manual redirects to every page instead of wildcards will fix this issue, however that isn't ideal
