MultiSelect: p-highlight class not being applied to selected options

Describe the bug

Seems like this was broken in 3.47.0. When you select an option from the list, the p-highlight class is not being applied to the option (previously it was).

In the reproducer link, which is using 3.46.0, the above issue is NOT occurring. Compare this to the same example in your current documentation site: https://primevue.org/multiselect/#basic

Please track this breaking change: #5105

For backward compatibility, highlightOnSelect can be set true.

I'm not sure why the default for MultiSelect should be false - was there any specific reason for this change? Also, I noticed the default for Dropdown is true, so there seems to be inconsistent behaviour here.
