DEX to double auction transformation design

Idea: make dexes look like cexes and thus trade-able in the same ways
you'd expect without the trader having to give af about underlying
routing, token liquidity locations, chains, etc..

Based on discussion with a slew of peeps in the 2nd wave blockchain
space this is definitely doable and likely not being approached in this
way by many others rn.
