Update parachain-template to use zombienet

• Per Deprecate polkadot-launch in favor of "Zombienet" polkadot-launch#189 I propose we remove the config for polkadot-launch with the zombienet configs and dockerfiles.
• Document in a How-to Guide in parallel, ideally before these files make it into a Polkadot release it would go live: Replace polkadot-launch content with parachain-launch & zombinet polkadot-developers/substrate-docs#1098
