[WIP] AuditV2 and AuditV3 Logging Formatting

⚠️ This is a WIP, final formatting is still up in the air.

Before this PR

Audit logs (both v2 and v3) did not have formatters. Even worse is that v3 is not even represented on the API.

After this PR

Both Audit types now have formatters and are properly represented on the API.

⚠️ Full disclosure, the first pass of this was authored by Claude with a lengthy planning process. Still working on my own passes.
