Am I just missing something? Where can I set which media query to stop using the mobile navigation?

Found answer on line 37 in header.php

You have to add data-hide-for and pass a value. New Foundation 6 life.

<div class="title-bar" data-responsive-toggle="site-navigation" data-hide-for="large">

And that keeps the nav icon there but not the nav
