Describe the contribution

Fixes Split "platform_cfg" into external and internal components #50
- Config files have been split up and organised. This makes the app more extensible and clearer for user modifications.

Testing performed
GitHub CI actions all passing successfully (incl. Build + Run, Unit/Coverage Tests etc.).

Expected behavior changes
No change.

System(s) tested on
Debian GNU/Linux 11 (bullseye)
Current main branch of cFS bundle.

In the current version of HK I don't actually see any items that need to be in the interface config file.

If anyone has a suggestion, let me know ;-)
