Poetry installation does not work with the new version of pyproject.toml #165

Pyproject was updated to accommodate installing giotto-tda from wheels.

However, the support for poetry locks does not work anymore.

This needs to be fixed for ease and speed of installation of the dependencies (also, no need to keep carrying locks if they can't be used...)
