Update nixpkgs

Pull upstream NixOS changes, security fixes and package updates:

- grafana: 9.5.7 -> 9.5.8
- haproxy: 2.7.8 -> 2.7.10
- linux: 6.1.45 -> 6.1.47
- qemu: 8.0.3 -> 8.0.4

This also adds a fix and update for jupyterhub:
