The way forward for this is to unskip the tests for older versions of ember in scenario-tester: https://github.com/embroider-build/embroider/blob/main/tests/scenarios/scenarios.ts#L104-L110

We should probably wait for #2029 so that we have a test that verifies esbuild is working correctly 👍 i.e. ember-source isn't breaking things
