Update guidelines in docs for things like values-production.yaml

Seems like the guidelines we wrote a while ago are a little out of date: https://github.com/bitnami/charts/blob/master/_docs/authoring-helm-charts.md. We have a lot of new guidelines and approaches we're using in the Bitnami charts and we haven't (at least publicly) documented them. We should update these guidelines so that we can share what we're doing with the community.

Also, specifically for the values-production.yaml, is this something we can propose to be supported in Helm 3?
