I would like to know if the screen / SD card could be used from within Tasmota or what would have to be done to make the screen accessible.
As there is a SD card anyway on the device, it should be no problem to place more cgi / HTML pages on it, so my idea would be to place some kind of screen interface on the ODROID to configure things like IP, Wifi, but also turn GPIOs on and off, read available mesurements, I2C etc.
I'm really willing to contribute here but not sure how to start..

First off, I am not sure is Tasmota runs on an ESP32 already. If not, delete may request :-) - although it'd be awesome.
