Using alpha version of Compose Watch

Compose Watch became fully released in Docker Compose version 2.22, however, at the time of writing the official linux apt sources only has 2.21.0 and therefore needs to invoke compose watch via the x-develop key. Whenever the correct version of Docker Compose is fully released to Ubuntu, update the usage of the feature.

Before:

docker compose alpha watch

After:

docker compose watch
