This should drastically improve local build times, and solve the nasty caching issue we've been having in production (#75).

We'll need to pay special attention to Routify if we update the build process
All environment variables must be passed through Vite, which has an impact on our GitHub actions too

While svelte-kit would be optimal, we should wait for a version 1 release and do this when we work on our own API (#111)
