Japanese Fluffy Pancakes

Wet

  • 4 egg yolks
  • 50g sugar
  • 150ml milk
  • 10ml vanilla extract

Dry

  • 5g salt
  • 5g baking powder
  • 5g baking soda
  • 110g 405 flour

Egg Whites

  • 4 egg whites

Directions

  • Mix wet, add dry, let sit 10min
  • Whisk egg whites to stiff peaks
  • Fold egg whites into mixture gently
  • Cook on low heat in ring molds

Tips:

  • Butter/grease ring molds
  • Fill to 2/3 capacity
