Document where custom volumes and services can be added

When an user wants to a add custom Docker configuration, then there is the temptation to modify existing files like docker-compose/otobo_base.yml. This is dangerous as an update might overwrite the adapted file. A better way is to add an extra file like docker-compose/acme_cool_feature.yml. This should be documented in the installation manual.
