Subject: [PATCH] fix: remove legacy Claude 2 series models from Bedrock
 provider

- Removed anthropic.claude-2-1-v1:0 (Claude 2.1)
- Removed anthropic.claude-2-0-v1:0 (Claude 2.0)
- Removed anthropic.claude-instant-v1:0 (Claude Instant)
- Updated test to use Claude 3 Opus model instead of removed Claude 2.1

Fixes #9220
