Is it normal that this listing query on NFT #3 returns more than one order? Are there any fields in the answer to distinguish the valid order?

If the listing is returned it should be currently valid. it is valid to have multiple active listings for an nft. If you are looking for the "best" listing, you can use https://docs.opensea.io/reference/get_best_listing_on_nft_v2

Okay! In my test so far I was deleting the existing listing before creating the new one, hence my surprise.
