Since the official demo doesn't contain any example of where to put a core-select handler, it's a bit hard to understand what to do.
I'm using Polymer 5.1
This doesn't work;
Neither does this;

What is the correct way of getting an event that I've selected one of the items? Thanks!

Aaaaargh! OK, what I mean is that (since I lack the markdown acrobatics to actually show you my HTML) regardless of where I put the on-core-select, it doesn't fire. I have copied my example from the demo at https://www.polymer-project.org/docs/elements/paper-elements.html#paper-dropdown-menu
