In the file roles/internal/Islandora-Devops.cantaloupe/vars/Debian.yml two of the path names are incorrect. They should be /var/log/ not /var/logs/

__cantaloupe_log_error_FileAppender_pathname: /var/logs/cantaloupe/error.log
__cantaloupe_log_access_FileAppender_pathname: /var/logs/cantaloupe/access.log
