WebM shows full support in Safari.
From my testing, Safari 18.3 does not support AV1 used in a WebM container (tested on iPad Pro with M4 chip which supports AV1 hardware-accelerated decoding of AV1).
It would also be worth adding this caveat to the AV1 support data page. MP4 is required for AV1 video in Safari.
